- Chicken with goat cheese vinaigrette
Use a bowl to mix the olive oil together with parsley (or any other herbs you have at hand and think would fit) and the sliced paprika. Crumble the goat cheese and stir everything very well. That’s your vinaigrette sauce. Easy-peasy!
Then sprinkle salt and pepper over the chicken breasts and season. Fry in olive oil for 2-3 min on each side.
Meanwhile, boil the couscous as a garnish.
Plate with the chicken breasts on the bottom, the vinaigrette on top and some couscous over the sides. Bon appetite!
- Chicken paillards with arugula
Start off by cutting the chicken breasts horizontally to butterfly as you open them up like a book. Season with salt, pepper and some fresh parsley. Bake at the grill for 2-3 minutes on each side (just like we did with the other recipe).
In the meantime, take a ready-to-use vinaigrette sauce or make one yourself and season the arugula, tomatoes and red onion. Gently toss with your hands to lightly coat.
Serve the salad with some of the chicken paillards on the bottom!
